Position overview
University House offers commercial hotel and ANU graduate student accommodation, and 15 diverse events spaces and hospitality venues. University House is reopening in mid-2026, after 6.5 years closure due to the 2020 Canberra hailstorm, and a complete refurbishment to restore and upgrade its rooms and facilities. The reopening, in conjunction with the University's 80th anniversary, offers an exciting opportunity to re-establish and grow the reputation and business of University House, and its contributions to the University.
The Sous Chef acts as second in command, stepping in for the Head Chef when required to maintain standards and continuity of service within the University House, which is the Hotel, Restaurant and Bar & Café on the Australian National University Campus. The Sous Chef supports the Executive Chef and Head Chef in leading day to day kitchen operations across a high-volume commercial environment.
The applicant must possess, Proven experience in a Sous Chef or senior kitchen leadership role. Strong people management and communication skills. Sound knowledge of food safety, compliance, and cost control. Calm, organised and confident under pressure.
As a member of a busy department, you will have a commitment to continuous improvement, high attention to detail and strong understanding and application of HACCP and Workplace Health and Safety. Oversee mise en place planning, production schedules and pass checks. Ensure consistent execution, portion control, and presentation across all menu items. Contribute to seasonal menus, recipe development, and staff training. Act as senior kitchen lead during the Head Chef’s absence.
